Spring is here and we’re starting to see it with our own eyes. The leaves on the trees are growing, the flowers are blooming, and the fields of strawberries are becoming plentiful again! Strawberry season for North Carolina begins around mid-April and ends around mid-June.
Although you may find strawberries throughout the year, this time is when they are in abundance for the state due to the perfect weather and climate. Strawberries are a wonderful source of potassium and vitamin C, the former beneficial for muscles and maintaining optimum blood pressure and the latter for our immune system. Strawberries also contain a great amount of fiber for digestive health. You can enjoy strawberries in many ways: as a jam, in a smoothie, mixed in with your morning cereal or oatmeal, or even as a topping for a savory salad. You can check out our a wonderful recipe for an easy Strawberry and Spinach salad here. No matter how you enjoy these wonderful berries, be sure to snag some fresh strawberries this spring.
